Key Responsibilities

• Supports the Culinary Team in daily preparations, ensuring ingredients, utensils and equipment are ready for service.
• Maintains a spotless, organised kitchen environment, in line with The Pacha Group’s hygiene and safety protocols.
• Washes, cleans, and stores kitchen tools and equipment with care and consistency, upholding impeccable standards at every touchpoint.
• Assists in the receiving and storing of deliveries, ensuring freshness, labelling accuracy and stock rotation.
• Prepares basic ingredients and mise-en-place under the supervision of senior culinary team members.
• Ensures all workstations are fully stocked and operational, contributing to a seamless and efficient service flow.
• Follows Hazard Analysis and Critical Control Points (HACCP) and food safety guidelines diligently, demonstrating responsibility and awareness in every task.
• Supports set-up and breakdown of kitchen stations, maintaining order and readiness before and after each service.
• Collaborates with Chefs and fellow Pacha Family Members, contributing to a dynamic, respectful and high-impact kitchen culture.

What We’re Looking For

• A proven track record as a Commis 1 or in a similar role within a luxury hotel environment or fine dining restaurant.
• A Culinary Degree or equivalent qualification is preferred, but not mandatory.
• Solid time management and multitasking skills to excel in a busy kitchen and maintain consistent service during high-volume periods.
• Sound knowledge of Hazard Analysis and Critical Control Points (HACCP) principles and practices, and a clear understanding of health and safety regulations, food hygiene standards and operational best practices.
• Previous experience in Forbes-rated or Leading Quality Assurance (LQA) properties is advantageous, demonstrating a strong commitment to service standards and operational consistency.
• Excellent interpersonal skills to collaborate effectively with guests, team members and other departments.

Misión del puesto: Es responsable de la implantación de la estrategia, de los estándares, atributos, productos y de la optimización de la eficiencia operativa en el área de Sala, Bares y MICE en el hotel.

¿Qué tendrás que hacer?

• Implementar la estrategia de F&B a través de los estándares en base a producto, calidades y dirección culinaria.
• Proporciona feed back al F&B Partner en cuanto a necesidades / oportunidades en el hotel.
• Identificar oportunidades y se las propone a su F&B CO.
• Ejecutar en base a indicaciones de su F&B CO.
• Realizar la adaptación local al país.
• Ejecutar en base al modelo establecido por Hotel Services.
• Siguiendo indicaciones de F&B Hotel Service, implantar Manuales Operativos por Marca, estándares F&B, en base a los ideales de Marcas, realizando adaptaciones a su hotel en caso necesario.
• Es responsable de la operación de bares y restaurantes del hotel.
• Coordinar y supervisar de forma directa la ejecución de las tareas para la implantación de la oferta de bebida y servicio estándar definida por Hotel Services en su hotel.
• Rellenar la plantilla de análisis del 3 year plan de su hotel y lo consensua con F&B CO.
• Supervisar la gestión diaria y interlocución operadores F&B y partners externos.
• Establecer precios según márgenes marcados por hotel services.
• Responsable de la rentabilidad a corto y medio plazo de F&B en el hotel. Realiza seguimiento del cumplimiento del presupuesto. Propone e implanta planes de acción en caso de desviaciones.
• Define la estrategia de marketing y relaciones públicas de F&B para su hotel en línea con la marca.
• Participar en la elaboración del presupuesto de su departamento según las pautas que hayan sido establecidas.
• Realizar seguimiento del presupuesto definido, velar por el cumplimiento del mismo, y trasladar al Business Partner cualquier desviación que se pueda producir dentro de su departamento. Participar en la definición de las medidas correctoras necesarias para minimizar impactos negativos y realizar el seguimiento de las mismas junto con el Business Partner.
• Participar en la elaboración de las proyecciones aportando información sobre su departamento.
• Analizar la razón de las desviaciones, participar en la definición de acciones correctivas y promover la implantación de las mismas dentro de su departamento.
• Participar activamente en la selección de su equipo y su difusión en social media.
• Informar al HR Partners de las vacantes críticas en su hotel.
• Conocer los planes de desarrollo y herramientas en materia de Recursos Humanos para fomentar su uso (Melia Home, Melia Escucha, E-melia, planes de desarrollo, Inspiring Opportunities, Graduates Programs, Código Ético...).
• Identificar el personal con alto potencial, así como participar activamente en el desarrollo de su equipo y del personal en prácticas (si aplica).
• Realizar la evaluación del desempeño de su equipo.
• Conocer los ratios de dimensionamiento y aplicar el staffing guide definido para sus hoteles, elevando propuestas de revisión cuando la operativa lo requiera.
• Revisar anualmente el plan formativo con la Dirección de Operaciones y área de HR, para proponer acciones formativas en base a las necesidades del equipo.
