We are recruiting on behalf of a growing street food restaurant group based in Spain. With multiple sites across the country the business is focused on refining and perfecting its concept ahead of a broader franchise expansion. This is a rare opportunity for an operationally sharp, entrepreneurially minded leader to step into a high-autonomy General Manager role. This role suits someone who thrives in a hands-on, multi-site environment and is energised by the challenge of building something, not just running it.
Commercial & Financial Accountability
- Take full ownership of the P&L across all sites, driving revenue, managing cost lines, and delivering profitability targets
- Lead the annual budgeting process and provide regular performance reporting to senior leadership
- Identify and act on opportunities to optimise operational costs responsibly and sustainably
Operational Excellence
- Deliver and maintain consistent operational standards across all restaurant locations
- Ensure full compliance with food safety, quality, legal, and labour regulations
- Oversee and continuously improve processes across logistics, HR, and day-to-day operations
Concept Development & Innovation
- Drive innovation in product development and customer experience, grounded in consumer insight and brand values
- Play a central role in refining and strengthening the restaurant concept ahead of future expansion
- Champion and protect the brand's identity and values across all sites
People Leadership
- Lead, develop, and inspire a senior leadership team with functions spanning operations, logistics, HR, finance, and product
- Build and sustain a high-performance, engaged team culture
- Manage HR fundamentals across the broader restaurant teams — recruitment, absence management, disciplinaries, and grievances
Customer Experience & Marketing
- Create and maintain a compelling, brand-aligned customer experience across all touchpoints — both in-store and online
- Collaborate on marketing initiatives to drive footfall, customer loyalty, and brand awareness
Growth & Expansion Preparation
- Work closely with senior leadership to ready the business for future growth and potential franchise development
- Deliver strategic projects on time and within budget, aligned to agreed business plans
- Proven experience in a General Manager, Head of Operations, or Operations Director role within a multi-site fast casual dining, QSR, or restaurant group environment
- Demonstrated ability to manage and improve a P&L with full financial accountability
- Strong people leadership experience — proven track record of managing, developing, and retaining a senior team
- Solid grounding in HR fundamentals sufficient to manage a team autonomously
- Experience in brand management, operational standards, and driving commercial growth
- Fluent in both Spanish and English (written and spoken — essential)
- Based in Madrid or able to commit fully to an on-site, field-based role in Madrid (no remote or hybrid working; no relocation assistance available)
Preferred Qualifications
- Experience scaling or growing a multi-site restaurant or hospitality business, including exposure to franchise models
- An entrepreneurial background — whether through founding, building, or significantly transforming a hospitality concept
- Experience working within businesses undergoing concept development or pre-expansion phases
- Familiarity with Asian cuisine concepts or international restaurant brands
Base Salary: €60,000 - €100,000 per annum, dependent on experience
Annual Leave: In accordance with Spanish statutory entitlements

Responsabilidades Principales
Responsabilidad Comercial y Financiera
- Gestión integral de la cuenta de resultados (P&L) en todos los establecimientos, con foco en ingresos, control de costes y rentabilidad
- Liderazgo del proceso de presupuestación anual e informe regular de resultados a la dirección
- Identificación y optimización de costes operativos de forma responsable y sostenible
Excelencia Operativa
- Garantizar estándares operativos consistentes en todos los restaurantes
- Asegurar el cumplimiento normativo en materia de seguridad alimentaria, calidad, legislación laboral y normativa aplicable
- Supervisar y mejorar continuamente los procesos de logística, RRHH y operaciones diarias
Desarrollo del Concepto e Innovación
- Impulsar la innovación en producto y experiencia de cliente, fundamentada en tendencias de consumo y valores de marca
- Desempeñar un papel central en el refinamiento del concepto de restaurante de cara a la futura expansión
- Velar por la identidad y los valores de marca en todos los establecimientos
Liderazgo de Personas
- Liderar, desarrollar e inspirar a un equipo directivo senior con funciones en operaciones, logística, RRHH, finanzas y producto
- Construir y mantener una cultura de equipo de alto rendimiento y compromiso
- Gestionar los aspectos básicos de RRHH en los equipos de restaurante (selección, absentismo, disciplina y quejas)
Experiencia de Cliente y Marketing
- Crear y mantener una experiencia de cliente coherente con la marca en todos los puntos de contacto — tanto en sala como online
- Colaborar en iniciativas de marketing orientadas a aumentar la afluencia, fidelización y notoriedad de marca
Crecimiento y Preparación para la Expansión
- Trabajar estrechamente con el/la Fundador/a para preparar el negocio para su crecimiento futuro y el desarrollo de un posible modelo de franquicia
- Ejecutar proyectos estratégicos en plazo y presupuesto, alineados con los planes de negocio acordados
Requisitos Imprescindibles
- Experiencia contrastada como Director/a General, Responsable de Operaciones o Director/a de Operaciones en un grupo de restauración multisede, QSR o casual dining
- Capacidad demostrada para gestionar y mejorar una cuenta de resultados (P&L) con plena responsabilidad financiera
- Sólida experiencia en liderazgo de equipos — historial probado en gestión, desarrollo y retención de talento directivo
- Conocimientos prácticos de RRHH suficientes para gestionar equipos de forma autónoma
- Experiencia en gestión de marca, estándares operativos e impulso del crecimiento comercial
- Español e inglés fluidos (oral y escrito — imprescindible)
- Residencia en Madrid o plena disponibilidad para incorporarse de forma presencial en Madrid (sin opción de teletrabajo ni ayuda para reubicación)
Requisitos Valorables
- Experiencia en el escalado o crecimiento de negocios de restauración multisede, incluyendo exposición a modelos de franquicia
- Perfil emprendedor — ya sea por haber fundado, desarrollado o transformado significativamente un concepto de hostelería
- Experiencia en entornos de desarrollo de concepto o fases previas a la expansión
- Familiaridad con conceptos de cocina asiática o marcas de restauración internacional
Salario Base: 60.000 € - 100.000 € brutos anuales (en función de la experiencia)
