Laboratory Coordinator – Quality Department

At Bolton Food, we are looking for a Laboratory Coordinator to join our Quality team. This key position ensures the verification, control, and traceability of raw materials and products by coordinating internal and external analyses and guaranteeing compliance with quality standards and product certifications.
You will work closely with the Raw Materials Reception, Internal Laboratory, R&D, Production, and Quality Assurance teams, participating in audits, product blocking/unblocking processes, and shelf-life studies.
What will you do?
Traceability verification and raw material approval
- Verify that traceability information for fish and other ingredients (entry code, batch, quantity, origin, analyses performed, etc.) is accurate and compliant with product requirements.
- Create and update entry codes in the QMS (Quality Management System).
- Verify MSC chain of custody codes and compliance with regulations and certifications (CRAEGA, DOP Vinagre de Jerez, MSC, HALAL).
- Manage associated documentation (analysis reports, certifications) and archive it in the QMS.
- Ensure traceability information is maintained throughout the entire production process up to packaging.
- Act as the owner of the traceability process during internal and external audits.
Sample request and management
- Request and validate fish and other ingredient samples from external cold storage facilities and internal laboratories.
- Approve materials only after receiving positive analysis results; communicate incidents to the the Quality Control Manager for the opening of non-conformities.
- Monitor the process until non-conformities are closed.
- Coordinate sampling of tuna flakes and fresh mackerel according to internal protocols and R&D recipes.
Blocking and unblocking management in QMS and SAP
- Block and unblock products/batches based on analysis incidents and following instructions from the Quality Control Manager.
Parameter control and analysis
- Comply with the analytical sampling plan in accordance with ISO standards and certifications.
- Proactively identify solutions in case of deviations from the analytical plan to ensure compliance.
Team management and analysis follow-up
- Coordinate the laboratory team and tasks, define priorities, and monitor results.
- Operate and calibrate equipment (chloride analyzers, weights, balances, HPLC) and coordinate preventive and corrective maintenance.
Shelf-life studies and product follow-up
- Carry out annual shelf-life studies and additional studies for new products or recipe changes.
- Communicate results to the Quality Control Manager for shelf-life date adjustments.
Laboratory purchasing and supplies management
- Manage laboratory material and consumables orders, control stock, and approve expenses with the Quality Control Manager.
- Identify alternative suppliers and coordinate invoicing with the Documental & Traceability Assistant team.
Documentation and equipment calibration
- Update formulations, allergens, and production parameters in the QMS.
- Ensure calibration and maintenance of laboratory equipment, contacting external suppliers when necessary.
What are we looking for?
🎓 Education:
- Bachelor’s degree in Food Science, Chemistry, Biology, or related fields.
💻 Technical skills:
- Traceability systems and QMS.
- SAP for product blocking/unblocking.
- Proficiency in office tools (Excel, Word, PowerPoint).
🌍 Languages:
- Spanish; English is a plus.
💡 Personal profile:
- Well organized, methodical, and detail-oriented.
- Ability to manage multiple tasks and priorities.
- Proactive, with strong analytical thinking and a results-oriented mindset.
- Strong communication and teamwork skills.
- Experience in laboratory coordination, audits, and quality regulations.
